In parallel, we provide technical consultancy for fresh milk curd production, supporting the process with selected starter cultures and dedicated formulations to achieve maximum uniformity and quality control.

Thanks to the TOSCA™ machine and our tested recipes, it is possible to produce fior di latte, analogue mozzarella, flavored mozzarella, stracciatella, and burrata with reliable and repeatable quality.

Curd powder​

Powdered curd is the perfect choice if you’re looking for a versatile and convenient solution to produce analogue mozzarella. Add fresh butter for a result similar to classic mozzarella. Alternatively, use palm oil to avoid animal fats and achieve a naturally cholesterol-free product.

Fresh curd

The fresh milk curd, developed according to the MMC Italy recipe, is designed to ensure optimal workability with the TOSCA™ machine. It is a solution created for producers seeking production continuity and process standardization, while maintaining consistent quality and reliability.

Once brought back to the recommended processing temperature, the process is fast and efficient: within minutes, the mozzarella is ready to be served, packaged, or sold.
